First Pizza on my Egg...Grana Padano and Belly Ham

For my first pizza, I ripped off a recipe from one of my favorite restaurants, City House in Nashville. The sauce is made by putting grana padano cheese, heavy cream and some mozzarella in a double boiler and cook down until you get a thick alfredo-like sauce. While the sauce is thickening, cut up some of the thickest bacon you can find into inch pieces and brown in a skillet. Roll out your dough, spread on the sauce, and sprinkle the bacon around. Crack an egg in the center on put on the egg for 4-6 minutes. Smear the egg yoke around the pizza upon removal from grill, slice and serve.

Ive never even heard of grana padano. Where did you find that? Probably be hard to come by here in arkansas. Is it anything similar to velveeta? Thats pretty easy to find around here.

Haha, I've never heard of it either until I tasted it. Apparently its a high end, aged parm. Whole Foods is where I found it. I'm sure if you asked for an aged parm, it wouldn't be far off.

I'm in Nashville also. I've heard tons of great things about the City House but haven't made it there yet. Hopefully I can remedy that soon.

Just tried to make reservations to the City House on Saturday and all they had was either 5 or 9:30. Will have to plan a little farther in advance.

Grana Padano is similar to Parmigiano-Reggiano but from an area outside of what can be called Parmigiano-Reggiano. Usually, it is a bit cheaper though, I've never thought it was a lesser cheese.
