Bobby Flay's Method of Ribs

I saw a show with Bobby Flay cooking ribs on the XL egg. He put the water pan on top of the coals, THEN the plate setter on top of the water pan, etc. Has anyone ever done that? I always put a water pan on top of the plate setter.
