    I dumped Ozark Oak in and immediately noticed that the pieces were much bigger.... Short story, more airflow and I'm stabilized at 300. I threw the brisket on at 6. Think 300 gridis ok? II'm still waiting for it to come down. 250 dome.

    We just finished the last of our brisket from last weekend and I could actually go for some more.  I need to go smoke something!

    Hey, you're in Nashville, right?  Are you going to the Music City Festival and BBQ Competition in a few weeks (24th I think off the top of my head)?  My wife and I are going to be judging on the KCBS event and would love to meet you over a beer or two (Fri night or after judging on Sat).

    I agree with CT and I am a bit disappointed, 7:45AM and I'm on my second Irish coffee. Course, no cooking to day, going over to my son's for some Webber ribs so I get to relax all day.

    BGE house rules-light the BGE, time for a beer; food on, time for a beer.  Then has wanted/needed to remain properly hydrated for the duration.  Thus the beauty of low&slow beyond the aroma and end-results.  :)
