What is the most creative, out of the box thing you have made on the egg (Egg fest T-minus 8 days)

So what was an egg fest is now a grilling fest, but should be fun regardless. I am asking for suggestions of fun stuff that you have made that you would consider lending me the idea. Of course, I would like to win but more importantly, if I get a bunch of people who say "wow, I never would have thought of making that on the grill/egg" then I consider it a success.

3 summers ago, I made grilled peaches, with a dollup of greek honey yogurt and a sprinkling of granola. Although I don't want to do that again, I would rather do that than something traditional.

any suggestions are appreciated-

I like the idea, but not sure if I would want to tackle bone marrow for 250 people. Especially since I have never made or tasted it myself-

Grilled Romaine lettuce is not uncommon but it always gets a great reaction from folks who never had it off an egg before. Also is is simple and fast.

We did smores sandwiches at egging in the mountains. White bread buttered then nutella and marshmellows with crushed graham crackers inside. Grilled directly on the grate. They're good.

something simple for a lot of people would be small german pretzel sticks. traditional with salt, caraway seeds and salt, cheddar pretzel sticks, maple syrup and walnut pretzels etc

Not very creative but was a big hit was Cinnabon pancakes with a maple cream sauce and a pecan praline sauce. I was known as the ......pancake lady. ;;)

Scotch Eggs. Serving a breakfast dish might be just the right kind of curveball to stand out. Plus, these things are pretty easy, and ridiculously good. Night before prep, and about an hour cook time in the AM.

I'd cook at a little higher temperature than 275...maybe 325 or so. Sausage options are pretty wide open. I tried sweet italian ground sausage and it was good, but I think next time I'll opt for a sage flavor, or maybe maple.

I'm not much of a fish person, but I sometimes make salmon fillets with lemon, dill and Johnny's Seafood Seasoning; then you completely cover them with sour cream! The sour cream keeps the salmon nice and moist and the smoke picks up this AMAZING smoky flavor. (It turns a little brown and looks like meringue.)

Impossible Chorizo Pie, Buttermilk pie, Tater Tot Breakfast Casserole, Bourbon Cranberry Ham, Stuffed Pork Loin.

If this is your first fest pace yourself. Do one less dish than you plan and do at least one meal that requires about an hour to cook....that way you can go mingle and taste what other eggers are cooking.

I was browsing through APL's "Serious Barbeque" tonight, and a recipe jumped out at me: BBQ'd eggs. Boil 'em for 12 minutes, cool in ice water, roll to crack the shells (but don't remove), and them smoke on the Egg low (225) for 45 minutes.

I haven't tried this (yet) but it sounds good, and would be fairly easy for your big crowd.

Can't find the link right now, but someone posted brownies cooked in oranges, they looked tremendous and support original. I know this is an older thread, did the eggfest already happen? Lots of great ideas around here.

I've done the bacon wrapped, cookie dough stuffed jalapenos too, those are surprising and delicious.

@Black_Badger- the event is on Aug 17.

Bacon wrapped cookie dough sounds amazing! The egg dishes to as well, especially the potato chip quiche. Unfortunately, I dont eat many yellow things (eggs or bananas).
