So I am finally getting around to posting these but both were great. I made fajitas on Saturday and lasagna on Sunday.
I did the APL Fajitas from Serious Barbecue. He has you make a pan sauce to dredge the meat in half way through cooking and then again at the end
Here is the flank steak after marinating and rub:
I got some pepper and onions all sexy on the grill, but I forgot to shoot the onions.
While the vegetables got all sexy, I painted canola oil onto the steak:
Then onto the grill:
After the searing, into the pan sauce:
Then back onto the grill to "flavor bomb" the steak and then back into the sauce.

Sunday is Funday, so I made lasagna, naturally.
This was layered noodle, meat sauce, mozz/ricotta mixture and mozz/parm on top.
While cooking, I prepped a fresh tomato/balsamic salad with some flaked sea salt:
