We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Chicken Breast Pinwheels

Took another stab at stuffed chicken breast while trying to be neater with the knife this time!!

I took 2 breast and butterflied and beat the livin h#ll out of them with a mallet, then stuffed with fresh spinach, dried cherries and apricots,feta cheeese and drizzled some balsamic glaze on the insides.Rolled them up and rubbed with Loveless Cafe Peach Rub,

Next on the egg at 400* raised direct for a bit then added the sweet potato slices.( cant remember who did those earlier in the week but thanks for the idea)
