I use the New York Times one with Hatch chile peppers last year. It's really easy and has a great depth of flavor. I added some fresh peppers from the garden for a little more heat(jalapeno and habanero). I used about 5 lbs of hatch and adjusted the ingredients. It doesn't crush your taste buds up front but it has bite and then the burn really comes on after 3 or 4 bites and you're thinking "man, this stuff is good". I use it on everything and even just dip into it like salsa.

Try this, great on shaved beef sandwiches.Real giardiniera should use peperoncini, but most westerners prefer jalapenos. Been using this recipe for some time...excellent with Chicago style Italian beef.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

jalapenos freeze nicely...great for hot sauce, chili or anything else for that matter,,,using the rest of last yrs crop as we speak mixed with some of the newbies..
