Flank Steak Pinwheel time and temp?

I have an old recipe for flank steak rollups/pinwheels that I have cooked for three decades on charcoal and gas grills.  I want to cook them on my new large BGE, that I have only made three cooks on.  Any suggestions for times and temps would be appreciated!

I hope the text attachment is readable...

I recently did a stuffed pork tenderloin, which is similar in thickness and I ended up cooking it on 350 for about an hour.  Flank steak can obviously be eaten much more rare than that so I would think 350 for 35-40 mins for med rare and then adjust the time at the end according to your doneness preference.

You were right on there!  The cook went at about 350 to 375 for about 35 minutes, incredibly tender and flavorful.

I buy them from the meat market pre-made. Love me some pinwheels. I cook them at 325 indirect. Takes 45-60 minutes. Juicy and tasty.

  • Here is today's flank steak roll-up cook.  Half with marinated black olives in the center, half with jalepeno centers.  Very nice, about 35 minutes indirect.  Some pieces were a little rarer than I like it, but the wife likes it so all is good.

Nice!  That is a great idea.  I would eat the rare pieces all day long!

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

I finished the cook with a few minutes each side direct for a bit of crispy.....
