Ok...like most of you, I have cooked countless amounts of butts on my Egg. I have cooked them anywhere between 13-17 hours at 225. I always pull them around 195 degrees. I always let the meat tell me when its done. It always turns out awesome. Again, like most of you, I also watch Food Network and Cooking channel. I noticed tonight on Diners, Drive Ins and Dives a guy from Memphis cooked his butts at 225 for 8 hours. It looked awesome. This is not the first time I have seen this either. I have noticed others doing similar things as well. What gives?? Am I way off base or missing something here???

How did he cook them? He probably crutched them through the stall. I bet they just didn't show it.

I was wondering the same thing. Lots of pork on that show in ovens with shorter times, but this was on a smoker. It certainly looked done...Finally back in the Badger State!

I saw the episode I think. Looked like he it was semi braisedCookin in Texas

If it's on DD&D, I will never see it. As soon as I see Fieddie's name come up, I change the channel. Doesn't matter to what.
I hate it when I go to the kitchen for food and all I find are ingredients!

General Question here with your answer. You're not missing a thing. "Countless amounts of butts" to quote you should give you the confidence to know you've got a good thing going. Why would something you see on TV make you second guess yourself?
