what to do with moose roast

my dad just called me and asked me to cook a 4 - 5 lbs moose roast for him on my large. I'm almost clueless on ideas for what to do with this. Anyone have any ideas?

    Find out where the meat came from - if it's sirloin or butt  you could get away with cooking to a much lower temp than if it's leg or a cut that has a lot of connective tissue, where you'd want to cook more like a brisket.

    You could add chocolate and make a chocolate moose ;)

  • Chris lilly has recipe for deer ham with that alabama white sauce. You might check into that. Would be similar.

    Maybe combine a smoke and braise? Always nice to keep delicious game meat as moist as possible...

    Wrap it in bacon? Or drape it across? I have no idea, a braise comes to mind. Interested to see what you do.
