Beef short ribs: cut crosswise so about 4-5" long. Dome 250 4hrs, foil 1hr, unfoiled another hr. recipe: http://www.foodandwine.com/recipes/ribs-with-hot-pepper-jelly-glaze My only regret is the foiling. They were delicious; it's just that I like a little chew.
