We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. Got any advice on Chili Verde?

I looked at some old posts but didn't find too much, I have a tenderloin roast the wife picked up, the kind that is stacked and wrapped.

Want to make Chili Verde with it but not sure how it would turn out due to the low fat content.
