Smoked Beef Tongue

This was initially done in the pressure cooker and then smoked. Best tongue I ever had. Sorry no pictures as never thought it would be as good as it was....

Smoked fresh tongue (Pressure Cooker)




3 lb tongue

2 cups water

1 tablespoon salt

2 bay leaves

6 peppercorns

6 cloves

1 onion quartered


Wash tongue .Place on rack in Pressure  Cooker. Add water and other ingredients. Close cover securely. Place Pressure regulator on vent pipe and cook 45 minutes. with pressure regulator rocking slowly. et pressure drop on its own accord.


 . Peel and leave in liquid until ready to smoke. Remove from liquid….pat dry…brush with dijon mustard and season with DP Raising the Steaks. Smoke at 225-250 raised indirect until 145-150 internal temp….about 2 hours. Used pecan chunks and chips.
