Flare ups?

Options
So did dome moink balls tonight for some friends but had alot of flare-ups and unwanted smoke.I cooked indirect with a foil wrapped stone at 375 or so.How do I prevent the flaring and bad smoke from the burning grease...maybe a water pan???

    I use a aluminum drip pan with an air gap between it and the platesetter.

    Yes an air gap probably would have helped...will try that next time.

    Oil, fat and grease boil at around 400-450.  The plate setter is often hotter than that.  But introduce an air gap and you can keep it closer to the dome temp.

    Saw the biggest flare up yet this past weekend. Did some bacon in a foil broiler pan with holes over a foil drip pan. Worked really well, but when removing the pan to set up the CI griddle for the French toast, ended up spilling bacon grease into the fire. Whole Egg flared up, setting the pan in my hands on fire as well. Fortunately wearing gloves so no burns. Smothered the pan fire with another pan, and let the grease fire in the Egg burn out before finishing the cook. No pics, as I was a little busy at the time, but it did happen.
