First time doing spatchcock chicken. Best work yet i've performed on the yard bird. Brined it for 6 hours. Added EVOO, Salt, Pepper, and Cajun Seasoning. It was absolutely great. Took the leftovers and made a smoked chicken salad. Looking forward to sandwhiches this week.

    Thanks for the encouragement on pizza. I will give it another shot sometime. Spatchcock was really fantastic. I will be doing it again sometime really soon

    Thanks for all the support!! Woke up this morning with the spatchcock on my mind. What a great way to cook chicken. Will be doing this quite frequently from this point forward. Thanks for all the suggestions and tips.
