We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! Slightly OT How do you buy meat cheap? Special cuts etc...

Say for instance a person wanted to open a specialty restraunt serving something out of the ordinary like beef cuts you don't find packaged at meijers, wally or Sam's. I can't even find tri tip here in central Kentucky. Do you guys have access to old time butchers? Where would you go if you wanted to find weird cuts of pork in bulk like ears and tails? Not that I want to grill either...it's just an example....
