We hope everyone enjoyed their Fourth of July weekend and is excited for more warm weather grilling! This week, we’ll be making these two burgers: Stuffed Portobello Mushroom and Caribbean Chicken, and also eating lots of these Ice Cream Sandwiches in honor of National Ice Cream Month! Before and after

Pig shots, spatchcock and a PBR.  Crammed 30 pig shots onto my small and because they were so tightly packed, the bacon didn't crisp up as I would have liked.  Lesson learned, woo for the large en route.  Used a Keilbasa sausage - may use something with more kick next time. As always, the chicken was moist, tender and flavorful - will pull what's left to make chicken salad.
