Chuck Roast and veggies

Had a 4/5 pound chuck roast in the freezer thawed out over night. This morning i started getting veggies ready and went a little over board for it all to fit in my aluminum pan so looking around i decided to use the broiling pan from my storage box in the kitchen . i Rubbed the roast with some black bart's and raising the steaks rub added red onion ,broccoli , cauliflower and green pepper along with some red skin potatoes all drenched in some EVO and tree hugger from tasty licks and mixed up a little better than bullion to start off the juice in the pan .Cooking at 325 Dome indirect on the XL shooting for a 4:30 dinner .If you look close you can see the chuckie buried in the veggies

XXL #82 out of the first 100, XLGE X 2, LBGE (gave this one to daughter 1.0) , MBGE (now in the hands of iloveagoodyoke daughter 2.0) and lots of toys -
I had a failure on this same cook this week! About a four pound chuck roast . Now i smoked it at 250 until it reached 145, then it went in the pan of various veggies at 350! But it just was so slow to cook. I ran out of time and pulled it at 200, wanted to go to 215. It was taking nine minutes to increase one degree internal... Beef is s-l-o-w !

All done chuck roast fell apart tender and moist the veggies sucked up a lot of the juice as you can see by there color . toasted a few club rolls on the egg while getting the veggies into a bowl and the meat shredded . made a a sandwich with some of tasty licks secret sauce on it really tasty and it was the first chuck roast that turned out for me. normally they haven't really fallen apart for me more a rip and tear or slice deal so am very happy with the turn out of this oneLarge Big Green Egg , XL Big Green Egg . Looks good to me! The best i have done was from HAP's post. I have had two failures since then = "slow learner"!!! One from trying to use the wrong cut of meat, and the last from not allowing myself enough time to cook it properly --- but i'm learning!!
