Well, I prepped my submission. It needs to sit for at least 6 hours in the refrigerator, but I'll let it go over night before I sear on the egg. This is hands down the craziest hair-brained thang I've ever cooked.

Pork Tenderloin stuffed with Goat Cheese,Sundried Tomato, Prosciutto , chopped Kalamata Olives, and fresh Baby Spinach. Brushed on some EVOO along with Garlic Powder , Salt and Pepper. Will sear and than cook indirect wit fresh cut Romary over the coals. I'll let you know how it turns out .PROUD MEMBER OF THE WHO DAT NATION!!!!! Stuck in Dallas.......

For your consideration -I stuffed a prime flank steak with chimichurri and onions. SWMBO then invited some friends - word got out there is a throwdown! Needing more grub, I improvised with lollipop chicken stuffed with garlic. Served with mashed taters, artichoke and avocado..If you like, please VOTE by clickitty clickin on the "Like"Simple Chimichurri - cilantro, lime, garlic, olive oil and salt to taste.On to prep the flank steak.. sweet onion, potatoes for later - and "beef love". I basted this bad boy with it while cooking.Stuffed the flank with onion and chimichurri.. wrapped it up and let it sit in the fridge for an hour.And them moved to lollipop chicken, Simple prep, cut off the nub, push the meat down.. I like to remove the little bone, and then insert some elephant garlic near the bone (usually serrano too, but kids coming over).Butt rub on the chicken - and onto the AR.Once the chicken was done, I cooked the flank indirect until 120F (rare), then moved to direct, volcano mode. (with artichokes). Basted with beef love, that's the shine. OMG.Plated it and ready to eat.. I love flank steak and chimichurri - great beefy flavor with strong lime and garlic. Onions were nice and soft, and meat was right temp.Great time and great food... Please 'like' if you like!+++++++++++++++++++++++++++Austin, Texas. I'm the guy holding a beer.

OK, Here is my humble submission.
Jalapeno shooters with tequila and lime juice.
Zucchini infused with basil olive oil and topped with tomatoes garlic, and cheese.
Roasted, butterflied chicken breast wraps stuffed with tomatoes, basil and mozzarella / goat cheese.
