    I just threw some baby backs on too! I'm using the 3-1-1 method as mentioned by fiver29.

    Right now my plan is to let it ride, so like a 4-1.  Trying not to use the crutch.  They've been on 2.5 so far and I haven't peeked.  Rolling steady at 275*.

    Thanks Matt.  I've had lots of family commitments lately, with Mrs. 500 going through full knee replacement surgery.  She's getting along better now, so I had some time today for ribs.  It's been awhile.

    Glad the Mrs is doin better!!!  I guess no Nitro on the ribs?? HaHa  I generally do my ribs about 325* straight through with no foil and saucing about the last 30 mins after they pass the bend test.

    4-1 worked. A thin coat of sauce every 10 minutes during the last hour. Funny how the full rack was more bendy and tender than the split rack. Mac and cheese and baked beans and a few good beers. Pork Rib Coma.
