1st Prime Ribs

Did my 1st prime ribs on the egg this weekend on short notice. I was going to cook some steaks but once at the grocery store, prime ribs was on sale... Picked up this piece of meat which was just over 8 lbs (with 3 bones). Slow cook it at 220-240 for about almost 3 hrs. IT temp was about 105 when I pulled it out. Removed the bones and fire up the egg to 500 for a quick sear.

It was delcious and was a huge success. I was so out of time that I completely forgot to take pictures but that is a good excuse to do it again!!
