Butt success

I started a 6# butt roast yesterday at 1:30pm. I was going to do a overnighter but SWMBO preferred cooking while awake. The butt went into the 170 degree stall and lasted for about 3 hours. It got to 195 about 10:15 and I tested the bone but it didn't wiggle yet. Went to 205 at midnight and it seemed done. I checked with my Thermapen and it also read 205. FTC and went to bed. Up at 6:30 and put in fridge for afternoon meal with company. Pulled and put into foil pan covered on egg for about 45 minutes to get hot. It turned out great and the company really enjoyed it. His SWMBO said thanks a lot. Now she was going to keep hearing about how good the egg cooks. Maybe a future egger in waiting.

How easy did it pull after cooling in the fridge. I've always pulled hot, then fridge and reheat as needed.__________________________________________It's not a science, it's an art. And it's flawed.- Camp Hill, PA

It pulled just fine. I had no problem whatsoever. I used Dizzy Dust on the cook and then sprinkled some while pulling. I have pulled right after FTC on prior butts but die to timing(too darn late) I did it this way. Works great either way.Gulf Coast FL
