We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. Gave this a try, you guess what it is.  It weighed in at just under 3 pounds.

Done on the XL with the lump pushed to the back so I could start indirect, and then do a final sear.  As it turns out the outside browned and crisped up nicely without any direct at all.  Cooked at 400 for 1 hour.
