Egg-Plant Parm

Started off by grilling some eggplant at 400 direct with a little Evoo salt and pepper.
Layered with a puttanesca sauce, mozzarella, and fresh basil from my garden. Baked at 375 indirect for about an hour. Topped with some Asiago and more mozzarella .

Came out very good, thanks for looking.

    I think it is a tomato based sauce generally used on pasta.

    DAWG, that looks great! 

    Carlie, puttanesca sauce has lots of garlic, tomato, anchovies, capers, olives and basil. I think it would be fantastic with eggplant.

    Puttanesca also contains chunks of eggplant, it was great but marinara would have done just as we'll. I'll be doing this again!
