Sat breakfast on the mini - Ham & Veg Frittata

The mini is turning out to be the favored breakfast cooker on the weekends. Made a ham and veggie frittata this time.

It was pretty simple. Fired up the mini. 

Groceries: Smoked ham (found while freezer diving), tomatoes, green chilies, red bell peppers, scallions.


Fried up the veggies first.

Added the ham next, and let it all get friendly.


Beat 4 eggs and added to the skillet. Closed the lid to help cook the top. I placed a cast iron fajita plate under the skillet to keep the frittata form burning.

The top was a little on the soft side, so I flipped it over onto the hot CI fajita plate.


Took the frittata off before it burned, so I consider it a win! Still learning how the mini works best, but I'm loving it so far.
