First picnic butt

Getting ready to start my first picnic butt on XL BGE. It's 9.5lbs. Counting on 2 hours per pound. Rubbed it with freshly ground black pepper, kosher salt and light brown sugar. It's my third butt ever, and my first without using a complicated rub. (By complicated I just mean a lot of ingredients.)

I stuffed the egg with as much coal as I could fit. I'll keep this forum posted. Hopefully I will have a succesful smoke.

    Looks good man- I think you will enjoy it.  Most of the skin will just peel off after it's cooked so no reason to waste complicated rub on that ;)


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    It's been 12 hours and the picnic butt/roast (not sure of the proper nomenclature) is at 190 degrees internal. My egg has been averaging 230 degrees grate temperature. 

    I was planning on 2 hours per pound. I hope it hits another stall on its way to 195-205. If this thing is done early it will interfere with my plans for the day. 

    How often do these things cook in less than 2 hours per pound?

    You can FTC it for many hours after you hit + or - 200.  It'll stay hot all day.

    You can keep it a cooler for four hours --wrapped in foil or i have put them in the oven -wrapped at 200 degrees just to hold them-- they never dried out on me.  They were turbo cooked.

    Success! Well, it looks good anyway. It stayed at 198 internal temp for a couple hours, and then I turned the egg up to about 245 degrees grate temp. Pulled it off at 205 degrees internal temp. 18.75 hours of cooking time. Egg has plenty of coals left around the edges. Wrapped in lots of foil and putting it in cooler for dinner time.
