Did some pesto stuffed flank steak last night. Tasted great. Just salt and peppered the outside, then butterflied it, and layered pesto sauce on inside. Rolled and tied it up, then threw it on Egg indirect for about 50 min. Only thing I wished I'd done differently was pull it off 5-10 min sooner. Most parts of it turned out medium well to well done. Just hard to get an accurate temp reading when it's stuffed.
