The next throw down will be a cast iron cook off! Thanks to @shtgunal3 for the suggestion. The rules are simple. Cook any dish you like using cast iron on the egg. Skillet, griddle, dutch oven...whatever you got. Post the pics here and the most "likes" wins. You are encouraged to post pictures of the raws and the recipe. If there are any questions please PM me and we will try to keep this discussion mainly for throw down cooks. When:
Entries will be accepted starting now through Sunday Jun 9th. We will keep the voting lines open through Tuesday Jun 11th and tally the votes and announce the winner Wed Jun 12th.
How:
Well, that's really up to you now isn't it!
Prize:
In order to encourage participation, the winner will receive a $25 Dizzy Pig gift card. That's how Smokey rolls.

ROASTED TOMATO AND BAY LEAF CHICKEN, WITH CILANTRO LIME RICE.
I missed the last throw down because life got in the way and I way over thought it. However, I already had this cook planned and the challenge fit right in. My mother in law is an egg fan and now I get the privilege of cooking nearly every Sunday for lunch. They have a sweet pool and I get to test out experiments on them. That is how I came up with this. Its kinda of a play on a fast casual Mexican place (small chain based here called Cafe Rio) here that is pretty popular. Note, my wife and mother in law are both gluten and dairy free so it brings in new challenges on things like this. Ultimately some queso fresco or cohita cheese would have been awesome ad ons. I actually did the chicken 2 ways but 1 was finished stove top because I couldn't fit them both on the egg. I am only posting the egg one.Here ya go.I started with a 4lb whole chicken and 4lb of bone in chicken breasts. They got happy over night in a brine of salt, sugar, water, garlic, thyme, cumin, corriander and clove. the wife did the shopping and she found a sweet deal on the breasts, i had ordered 2 whole chickens but can't complain about that.going into the bath to get happy. brining ads great moisture and flavor. i never do chicken without it.I removed from the brine, rinsed and let them sit uncovered in the fridge for 3 hours before cooking. They then got rubbed with a mix of equal parts, cumin, coriander seed, garlic powder and 1/2 parts of chili powder, black pepper.I rubbed them heavily under and over the skin.They went on to the egg at 325 indirect with a handful of cherry chunks for smoke with the cast iron grid on the p.s. with no drip pan.The breast took about an hour to hit 165 and the whole chicken took about 1 hour 20 min to hit 175 in they thighs. For some odd reason I didn't get the dark red smoke color you usually get with cherry but the flavor was there for sure. I had to kick the wife out of the kitchen she kept stealing bites.They rested for about 15 minutes to cool enough to handle and be pulled. This is half the chicken that was cooked, after being pulled.I had tossed 2 large tomatos on the egg when I put the chicken on. The roasted for about 30 minutes until they were really mushy and then pulled and put in a zip lock to steam the skin loose. They got put into my CAST IRON porcelain coated dutch oven with some homemade chicken stock. (frozen still in the first picture)I put it over low heat to melt the stock, then added again cumin, salt, coriander seed, black pepper, chili powder, garlic powder, a jalapeño (split in half seeds left in), a couple of bay leafs, the juice from 1 orange, the juice from 1 lemon, and 1/2 a bottle of red stripe beer (because thats what I was drinking at 10:30 am). Before the bay leaf and jalapeño went in I hit it with the stick blender to puree the tomato really quick.then the chicken was added back in.Back onto the egg it went for about another 45 minutes until it was reduced down and the chicken could soak up some of the added flavoring. It was uncovered to grab some remaining smoke, and to steam off the extra moisture. The egg was still rock solid at 325.While this was happening the wife whipped up a batch of fresh pico. It was 4 tomatos, cilantro, 2 jalapeños seeds removed, juice from 1 lime, a splash of white vinegar, and 1 yellow onion.I also made a batch of long grain rice in the rice cooker, this got tossed with some cilantro and lime juice. It came out fantastic very much like what they serve at chipotle which we really enjoy. The last Item needed was a condiment that we really like, Creamy tomatillo ranch dressing. It is super simple, 1 packet hidden valley ranch, 1 cup mayo, 1 cup Herdes green salsa, and some cilantro. No pics of this step because we were getting pressed for time and it is really just mixing things with a fork.After much ado the chicken came off the egg, so it could cool and the sauce thicken up a bit. Here is the finished product.My wife plated hers up more as a salad, basic assembly from botom up of corn tortilla, rice, chicken, fresh bib lettuce from the garden, pico and tomatillo ranch.I plated mine up as tacos, basic assembly of corn tortillas, rice, chicken, lettuce, pico and tomatillo ranch. the only difference really is the wife at hers with a fork, I ate mine with my hands.It was a great meal, I thought I made enough for some leftovers but it went over so well that I think my wife has enough for lunch tomorrow and thats it. Thanks for the throwdown challenge it was fun and I look forward to seeing what you all have to offer. -

Let me start off by saying that I know there is no way in hell that I'm going to win this thing. That being said:::::
I decided to fry some burgers in a skillet on the egg tonight. Went to the slaughter house yesterday and got some fresh bacon and 3 lbs of fresh 80/20 beef. Got the skillet up to around 400 and threw some bacon on for toppings. Seasoned the burgers with just salt and pepper. Cooked till IT of 160. These things were juicy and full of flavor.
I've always liked burgers better because they seem to have a better flavor after sitting in all that unhealthy grease. These had that plus the grilled flavor too. I will do this again. No plated pics. These were eaten straight off the grill. Kids couldn't get them fast enough.___________________________________
