Crepes!!
Was at the farmers market this weekend and the gal was basically using a baking steel over a gas range. Hmmmm crepes may have to be tried some time....

I don't see any reason that you can't use the steel as a flat top as long as you have something underneath it to catch the dripping. Omelets, hashbrowns, crepes, pancakes, sausage, bacon, have at it. I got a steel that was 13 inches so I could use it on both my Large and my medium, and my 16 inch drip pan should work to catch anything that drips off from high fat cooks.
I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season. -
That is crepes and pancakes tonight on the BS. I did quesadillas last night and they were really easy. 2 mins per side.
