Advice needed on 3.5 lbs whole grouper cook

Picked up a 3.5 lbs strawberry grouper on the way out of town yesterday at a seafood market in Holden Beach, NC. Could definitely use some pointers on how to prepare it. The fish came gutted and scaled. I was thinking about wrapping it in bananna leaves like the BGE cookbook recommends for the snapper cook. Any thoughts from you guys would be greatly appreciated.

a salt crust would also be a good way but you would loose the smokey flavor of the charcol.

Thanks Wolfpack. Just left Whole Foods. No bananna leaves available this week. Looks like I'm going with the salt crust.
