Thursday Night Cook - Stuffed Pork Loin

Tried to butterfly an about 3lb bones pork loin roast...

Stuffed with spinach, olives, and cheese. Tied and then coated with fresh rosemary, garlic, salt, pepper, and olive oil.

Made a cucumber, red onion, and tomato salad to go along with...

Now I have to get it on the egg and hopefully the T-storms in the area miss us for at least a little while :)
