Thursday Night Cook - Stuffed Pork Loin

Tried to butterfly an about 3lb bones pork loin roast...
Stuffed with spinach, olives, and cheese. Tied and then coated with fresh rosemary, garlic, salt, pepper, and olive oil.
Made a cucumber, red onion, and tomato salad to go along with...
Now I have to get it on the egg and hopefully the T-storms in the area miss us for at least a little while

Outstanding looking. Pro tip: wilt your greens before stuffing and you will get three times the amount in the same space. Raw greens cook down so much they seem almost non existent when cooked.Duncan, SC

Not a chef. I made this same error before. Learn to roll cut instead of butterfly the loin. Pound it flat and then stuff. Roll it like a cinnamon roll and your filling will be distributed in layers.Duncan, SC
