Split a brisket?

I've cooked 2 flats travisstrick style and botched both. Guess I'm a maroon. Regardless I want to try a packer this weekend Centex style . I'm going to try to find a small one but it's still more beef than we need. Should I cook the entire piece and freeze some or can I separate the flat and point? Yes fred, I'd still punch a baby if I could get one right.

    Cook the whole magilla and put the leftovers in the vacuum packer and freeze em...make ya some burnt ends as a reward for a job well done...meat candy.

    True dat! Even the sliced stuff with a little beef stock or jus in the bag is as good, if not better when you reheat

    cook the whole thing and save it. If not, split it long ways so you have two narrow briskets with point and flat. They sell them that way at the grocery store here.

    Dude, it's the best part of making brisket. Separate the point when its done and cube it up, some people shred or chop, sauce the hell out of it and put it back on the egg for a couple of hours and it makes an amazing sandwich or plate. Crunchy and fatty!

    Steven I salvaged my flats by shredding, heating in simmering broth mixture, onions/mushrooms/peppers/provolone.. Like a Texas cheesesteak.

    Talked to my butcher... Smallest is around 16 pounds. They will cut the flat off... I really like the point.

    Cook the whole thing.   Leftover brisket is gold at our house.

    We dont vacumn pack, just use a 1 gallon ziploc freezer bag, put about a pound in each one, squeeze the air out.  They dont stay in the freezer long enough to get freezer burn.

    Eat all you can when you cook it, share with the neighbors, then chop the rest and freeze.

    When you want...

    topping for baked potatoes

    Enchaladias   ( not sure how to spell it)

    pizza

    tacos

    liven up some burgers by mixing some in

    beef flavored rice-a-roni

    etc....

    pull a bag out - defrost in the microwave and you have nectar that will jump up any weekday meal.   All of the above works for pulled pork as well.

    When we get low, I cook more.   We no longer cook briskets or butts based on the event of eating bbq - rather, just cause we use it for so much.
