Really small get together today. Cooking 30 turtle eggs and instead of jalapeƱos I went with the candied jalapenos... We'll see. I also spatchcocked a chicken and pulled for chicken salad. I go real, real heavy on the hickory. We keep it very simple. Mayo, celery and pepper. No need for grapes or apples, etc. The smoked chicken is the star. Almost everyone who has tasted it says it's the best they've ever had. I've never had the salad with the hickory flavor like this. It was born out of a left over spatchcock.
