cooking chicken in the middle of a low and slo!!!!

Im doing three racks of ribs low and slo bout 250 275 .....can I add chicken breasts and italian sausage about 2.5 hours in? And keep them at my low temp...?

    I don't see why not. I usually cook chicken breasts at about 300. When there almost done I fire up the egg a couple 100 degrees and get a few grill marks. You should be fine though.
