Had a hankering... always a bad thing :))

Went to a local farm butcher; Wyebrook Farm in Honeybrook, PA http://wyebrookfarm.com/market-info/

Explained to the young butcher what I was after, as best I could...

He went and pulled this really big chunk of beef & bone that was grass fed and raised right outside on the farm and proceeded to butcher me down to 3 of these lovely things.

Planning on doing them on what skewers I have and will have to get a little creative until I can get a few real weapons of meat destruction for this type of cook.

Going to do a garlic, sea salt, pepper, and EVOO paste for seasoning and go until 140 IT...
