Sous vide Scallops with home made bacon

So the ladies went to Pike Place market yesterday, we requested that they bring back some scallops and reminded them we are big growing boys so don't be shy! Holy cow did they go crazy.

7.5 lbs of scallops 52 of them.

Looks like about $40 worth of sea scallops.

We cooked up half and froze half 30 minutes in the bath at 125 then a quick sear on the CI with some grapeseed oil. Accompanied with Brussel Sprouts in Bacon fat.

1.5 inch in diameter and 52 of them. I didn't have to pay for them so I have no clue. Thankfully!

Were they wet or dry scallops?

I believe they were wild dry scallops. I will have to ask the wife. I was at home tending to the G&Ts whilst the ladies were food shopping.

Always ask and notice the color. BIG difference.

Thanks VI learn something everyday! I asked the wife and she couldn't remember what the sign said. Apparently it was $200 worth of scallops so I hope they weren't injected with crap! What's the color difference ?

Thanks Travis, watching that video they seemed more the color of the Dry scallops. Either way they tasted good bit I will be sure to find out in the future!
