So I was at a new butcher today and he told me that all connective tissue breaks down at 168 degrees - proven fact. It is a restaurant/butcher and I was asking what temp he cooked to and he kept reeling me he leaves it on for 11 hours - never temp. Told me 168 fibers breakdown fact and said the longer you leave at this temp the more breakdown. Opine please.
