Thursday Catfish Meal...

Now that I'm not quite as nervous about doing fish on the egg, esp using my new CI skillet... I decided to do a slightly different version of my grouper cook last Saturday...

I am planning on some blackened catfish filets topped with an Orange & Vanilla finishing butter I picked up this morning...

A mango, cucumber, and mint salsa / salad thing on the side

And some egged corn on the cob... husked, wrapped in foil with some butter, salt, pepper, and garlic...

Could blow up in my face... So what, if I can pull it off with $27/lb grouper, it should be a snap with some $6/lb catfish... :)

I will be adding pics to the thread later as time and beverages allow ;)

    My wife and daughter have never had catfish and the wife is a little leery, my daughter is willing to try just about anything when it comes to food.

    Tried to tell the wife that catfish can be great...

    Guess we'll find out

    I have one word for catfish.   Meh.

    But, knowing you, you'll have it tasting like pompano or red snapper.

    Hey hey guys. Catfish is top notch here in my area. My family has about 20 ponds across our farms.

    Fried, blackened, or grilled we love it.

    I have only enjoyed fried catfish.  It has a weird texture if not fried.

    @Chubbs wow! That's a big fish... Bet you ate really well off of that guy!

    My wife's cousins live in Erie and do a fish fry every year of fresh Perch. Best damn fish I've ever had! They catch it in the lake and do it at their deer camp. Look forward to that weekend every year.

    Hap, that's exactly the way I do catfish. Glad it came out well and the family liked. I add a squeeze of lemon on it after it has rested. And serve it on a bed of steaming fresh plain white rice with a small dollop of butter on the rice. Don't know where I can find orange v butter around here.

    Very nice fish Chubbs -- you one these "bare hand fishermen?".

    As in noodling? If so, nope. My brother has done it in Tennessee, but this was just plain old midnight fishing buzzed up on the lake.

    Thanks!!! My daughter was a little surprised by the Swamp Venom, but then got into the swing of things by getting a little of the salad with a small piece of the fish on the fork at the same time. The salad and finishing butter cut the heat of the rub nicely.
