Mash-ed taters stuffed chicken thighs (pic heavy)

@Hennaple and I were discussing what was on tap for the weekend cooks, and he gave me the idea for stuffed boneless/skinless chicken thighs.  I was talking to the wife about what we should stuff them with, and my son suggested mash-ed potaters.  We happened to have some leftover mashies from the night before.  Added some cream cheese, shredded cheddar, and of course wrapped them in Wrights bacon.  My publix didn't have deboned thighs, so we got skinless thighs and I removed the bones with a fillet knife (wasn't too hard).  Pounded flat with the mallet, stuffed, wrapped, and secured with toothpicks if needed.   I dusted them with Oak Ridge chicken seasoning after pounding the chicken, then a little more once wrapped.  I cooked them at 350ish high in the dome until the bacon was crispy.  Added just a small handful of cherry chips.   The internal temp was about 190 when they finished.  This will definitely be repeated!

    That looks good! I finally stuffed some chicken the other week and wonder why it took me so long. This will be tried at my house sometime soon!  =D>

    Thanks man!  This was my first stuffed chicken as well and I too wonder why I waited so long.  Boneless thighs are made for stuffing.

    Thanks man!  I am loving the Ozark.  It is the best lump I have used for sure.  Lights fast and burns clean.  When I lit the egg yesterday the egg was stabilized and ready for food in about 15 minutes.

    @Chubs- I agree...so far the only meat I have stuffed is burgers and chicken, but I plan to start stuffing more!

    I did stuffed thighs yesterday and mistakenly bought bone in. Instead of cutting them try holding the thigh in your hand and pulling or peeling the bone out.... Easier to me.

    @Chubbs... The only thing not good stuffed is a diaper.

    Thanks!  Chicken Bombs were a big trend around here around this time last year.  You can stuff them with all kinds of good things.

  • Looks fine! Question: approx how much tater mixture per thigh? Yours didn't seem to ooze out like a lot of stuffings do...

    Looks fine! Question: approx how much tater mixture per thigh? Yours didn't seem to ooze out like a lot of stuffings do...
    I would estimate it was just about 1 heaping tablespoon per thigh.  I tried not to roll them up too tight...sorta treat the chicken meat more like a taco than a burrito if that makes any sense!
