Tacos Tonight

Just put a 3 1/2lb chuck on for tonight's tacos. Rubbed it with Fajita seasoning and salt and pepper. I am cooking at 250 indirect till it hits 160 or so then gonna wrap it with foil May throw on a chicken so we can have both kinda tacos. Time will tell

    I use a skirt steak for tacos, cook it very fast and hot and then slice against the grain, thin.  I'll have to try a chuck roast sometime, sounds good!

    Looks good.  I bought some Dizzy Pig Fajitaish a while back.  It is really good stuff and would be perfect for your application.

    Sounds like a good meal will be had tonight! 

    I was going to make tacos but we are going to have more people over next week so it is postponed till then.

    Now the chicken has been rubbed with the same fajita seasoning. I loosened the skin and bout turned this thing inside out. In the little Tupperware jugs my wife has some frozen guacamole and humus that will be part of the tacos
