We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. FILET

Costco filet.  Seasoned with raising the steaks, a little extra garlic powder, and EVOO.  Seared at 750ish on cast iron lowered grate for about 2 min per side.  Let sit for 15 min.  Got dome to 400.  Finished on raised grate and pulled at around 128 internal for a nice pink medium all the way through.  Very happy with this one.  Hope I can repeat it.  Used royal oak lump with some cherry and apple chunks.image
