Just got my LBGE last week and I've already used in 3 times. All chicken so far. I have the placesetter and ashtool but will grown into all the other extras.

What advantages do I have with the cast iron vs. stainless steel racks?

Any recommendations for my first slow indirect cook over the weekend?
