Beef Tenderloin Roast - sorta a TRex method

The roast 2 1/2 pounds seasoned with just salt and pepper

The sear, at 600 F for 3 -4 minutes a side

The rest for 20 minutes while the Egg cooled to 400 F

The finished product, done at 400 F, raised direct, to IT 135, with just a handfull of hickory chips.  You could cut it with a fork.
