We hope you all got to celebrate those tasty food holidays last week, we sure enjoyed them! We are even more excited about the beginning of fall, for so many reasons, but mainly for experiencing the cool, crisp air while being outside cooking up the best recipes the season has to offer. Ghetto Raised Direct Chicken Thighs

thanks to griffin for posting those crabmeat stuffed chicken thighs, i couldn't get thighs out of my mind. haha. 

so last night we stuffed a few with bacon, arugula, and provolone. seasoned with evoo, salt, pepper, & paprika. smoked over hickory & apple chunks 350-370 for 40 mins. didn't take the bones out, next time i should. just trying to make things easier.  

here is my ghetto raised direct.  4  2x4s double wrapped in foil--->Spider--->cast iron grate.   worked amazing.
