that article is so close but then he lost me when he trimmed off the best part, dont trim it

I think he only trimmed off the best part on the 109 Export cut, since it was dessicated from the dry aging since it was over trimmed for dry aging.Lesson? Get a rib roast with the fat cap intact.Full disclosure: I would have made bleu cheese beef jerky with that spinalis. It IS the best part!
