Long week...

Throwing 3 slabs of big center cut spare ribs on in a little while. Picked up some other fun stuff... Car Bomb fixin's and a 1.75 Woodford Reserve that was on sale.

Not really gonna cook anything this weekend (please don't take my card away). Gonna eat on all the leftovers that are in the freezer that we haven't managed to eat during the last few weeks. I did get a KA sourdough starter this week and will be baking some bread. Happy St. Patty's Day also. Supposed to be warm, but rainy here.

Here are the spares. Decided to just do two of them since they are almost 8 pounds to start.

Little olive oil and lots of DP Swamp Venom. On indirect at about 325 or so with some hickory.

Haven't done squid yet but I have done octopus on the egg and it was fantastic. Just be sure and don't over cook it.

Going simple tonight, some pork steaks and burgers with zucchini and yellow squash on the side. I like the way you folded the ribs in the rib rack. I never thought of that. Been trimming mine to fit the egg but never again. Cheers to ya brother!

Never seen the ribs set up like that on the vee rack!! Good idea! I too have left overs -- "Hap's" meatloaf. Tomorrow i am cooking for a birthday party - barn dance -- 70 people! Just picked up 104 pieces of organic chicken. I will Broast them tomorrow afternoon. So my meals are planed for the weekend!! No egging !

@hapster -- What are the advantages of using a rib rack like the one in your picture, where the ribs are on the side instead of flat on the grate?

I'm thinking you really don't have to turn them -- the heat is basically equal and equal exposure to the smoke...

Cause its another toy :)

I think for real its easier to fit multiple racks, ESP baby backs.

Those ribs look killer Hap!!!! I have been considering ordering some dizzy pig and was thinking about swamp venom, is it very spicy (hot) as my kids and wife do not like much heat.Maybe the dissy dust would be better????

@canman1976... It's not as hot as you would think. It does have a little kick, but if you don't load it on you should be alright.

Sippin some Woodford Double Oak curently. May do a carbomb later :)

Ed, how are the Nat Shermans? I think I saw them on a tv show recently. Had never heard of them. I was looking at their website today.

The Nat's are good... I would have preferred the darker version of the Banker. This one was well made, good draw and smooth flavor...

Worth picking up a few and giving them a try
