So our church is having a "Taste of the South" festival in late April. I signed up to egg either some butt or ribs with a North Carolina style BBQ sauce. Sunday morning, I found out that there will be trophies. Game on.
I usually do butts with a homemade rub low n slow and do my ribs car wash mike style. I am curious if anyone has any tips to take either to the next level?
