It was a pizza night and wanted something a bit different.
Ingredients:
Seasoned Olive oil
Tomatoe sauce (thinly applied)
Browned thin sliced eggplant (salt and peppered)
Cheese sauce
Parmesean cheese
The cheese sauce was made using Mexican cream, parmesean, tyme, chives, and parsley combined in a sauce pan over medium heat.
Also made a pepperoni pizza as a backup. Both were eaten.
