I don't have it in front of me. But I cooked indirect at "I think" 350 till it was 130-135 then seared it for a few minutes each side till it was abt 145. I can't remember exactly as I'm stuck in traffic. Haha. Total time was roughly 2 hrs. I need a meat slicer as I wanted to do sandwiches but they were a tad chewy. Flavor was great. I made up some "horsey sauce". loved it.

0 • Off Topic Disagree Agree LikeTry getting a block of cheese and grating it yourself. They add cellulose (wood pulp) and other starches to prevent it from clumping. It also prevents it from melting as easily and uniformly. Quick toss in a food grater and you got shredded cheese without those additives. Not only that, its cheaper. Just a tip. Food looks great, though.
