Sorry for the OT, but I am looking for a good knife sharpening machine.

All you need to know is Chef's Choice EdgeSelect 120. Try Amazon for a good price or search through google.

I agree. The Chef's Choice 120 is great! I used to sharpen knives by hand using a Razor' Edge guide system. Not since I got the Chef's Choice!

Wardster,[p]I have had great results with the Spyderco Sharpmaker, and I also own the Chef's Choice. Both are good, but the edge goes to Spyderco [sorry for the pun]. It is not a machine -- it consists of four ceramic sticks in a holder. Very easy to use. I agree. Spyderco is a great knife sharpener. My knives were in really bad shape and it only took a few minutes to re-bevel the edges to the proper angle. After that it's a piece of cake to keep them sharp, very sharp. I touch them up every now on a steel.[p]My neighbor was so impressed he bought one too.[p]Spring "Sharp As A Tack" Chicken

DOn't go cheap on a lesser model of the Chef's Choice. The design of the wheel on the lesser models are INFERIOR. Go with the 120. in 30 seconds, I can get an edge that will shave your head, LOL.[p]My oldest has made a request... "Daddy, can the bald guy come to my birthday party in March?" Too funny! I asked her where she wants to have the party and she said, "The Dessert Cabin!" Poqal & Blusmoke done good![p]Banker John
